Ingredients:
4 teaspoons extra virgin olive oil
1 sweet onion (chopped)
3 cloves of garlic (chopped)
Spice mix:
1 teaspoon of paprika
1 teaspoon sea salt
1/4 teaspoon ground turmeric
1 teaspoon garlic powder
1 teaspoon of onion powder
1/4 teaspoon black pepper
1/2 teaspoon dried oregano
1/4 teaspoon dried thyme
4-5 cups Green Cabbage (finely shredded and chopped)
1 can diced tomatoes
1 sweet potato (peeled and cut into cubes)
1 cup of uncooked red lentils
5 cups vegetable broth
Directions:
In a large pot heat olive oil.
Add onions and garlic to warm pot and sauté for a few mins.
Mix the spices together well.
Add 2 tablespoons of the spice blend to onion and garlic mixture, stir and let sauté a few minutes longer.
Add cabbage and can of chopped tomatoes with juice. Stir for one min.
Add sweet potato, red lentils and vegetable broth.
Bring to a boil and then simmer for 30 minutes or until potatoes and lentils are cooked.
