Metabolism Boosting Soup

Ingredients:

  • 4 teaspoons extra virgin olive oil

  • 1 sweet onion (chopped)

  • 3 cloves of garlic (chopped)

  • Spice mix:

    • 1 teaspoon of paprika

    • 1 teaspoon sea salt

    • 1/4 teaspoon ground turmeric

    • 1 teaspoon garlic powder

    • 1 teaspoon of onion powder

    • 1/4 teaspoon black pepper

    • 1/2 teaspoon dried oregano

    • 1/4 teaspoon dried thyme

  • 4-5 cups Green Cabbage (finely shredded and chopped)

  • 1 can diced tomatoes

  • 1 sweet potato (peeled and cut into cubes)

  • 1 cup of uncooked red lentils

  • 5 cups vegetable broth


Directions:

  1. In a large pot heat olive oil.

  2. Add onions and garlic to warm pot and sauté for a few mins.

  3. Mix the spices together well.

  4. Add 2 tablespoons of the spice blend to onion and garlic mixture, stir and let sauté a few minutes longer.

  5. Add cabbage and can of chopped tomatoes with juice. Stir for one min.

  6. Add sweet potato, red lentils and vegetable broth.

  7. Bring to a boil and then simmer for 30 minutes or until potatoes and lentils are cooked.
