Cobb Salad
Ingredients:
5 cups chopped romaine lettuce
2-3 clementines
1/3 cup shredded chicken
1/3 cup carrots, grated
1 avocado, halved, seeded, peeled and diced
2 hard-boiled eggs, diced
1/4 cup sliced green onions
1 handful of sesame seeds to garnish
For the dressing:
1/4 cup rice wine vinegar
1 clove garlic, pressed
1 tablespoon sesame oil
1 teaspoon freshly grated ginger
1 teaspoon soy sauce
Directions:
To make the vinaigrette, combine all of the ingredients together in a mason jar and shake well.
To assemble the salad, place lettuce in a large bowl and dress lightly; top with clementine, chicken, carrots, avocado, boiled eggs and green onion. Drizzle a little more dressing over the salad if desired and sprinkle with sesame seeds.
Serve immediately.
