Cozy Lentil & Chickpea Dish

Ingredients:

  • 2 cups red lentils (cooked)

  • 4 teaspoons virgin coconut oil

  • 2 cups sweet onion (diced)

  • 6 garlic gloves (minced)

  • 3 teaspoons fresh ginger (grated)

  • 2 tablespoons red curry paste

  • 1 tablespoon curry powder

  • 1 teaspoon ground turmeric

  • 1 teaspoon ground cumin

  • 1 teaspoon sea salt

  • 2 cups crushed tomatoes

  • 1 can chickpeas (drained and rinsed)

  • 2 cups brown rice or quinoa (cooked)

  • Fresh cilantro and plain greek yogurt to garnish

Directions:

  1. Heat oil in a large pot over medium-high heat. Once oil is hot, add in garlic, ginger and onion. Saute for 3-5 minutes. Next add in curry paste, curry powder, turmeric, cumin and salt; stir frequently and cook for 1-2 min to release flavours.

  2. Add in tomatoes, chickpeas and cooked red lentils. Cook until heated through (10 min) and then simmer for 20 min more.

  3. Service over quinoa or brown rice and garnish with fresh cilantro and a dollop of plain greek yogurt.
