Creamy Chia Pudding
Ingredients:
2 cups coconut milk (from carton)
1 can coconut milk
2/3 cup cold water (more or less depending how thick you like the consistency)
2 tbsp maple syrup
1 tsp vanilla extract
Pinch sea salt
5-7 tbsp chia seeds
Optional 1/3 cup cashews to make it creamier (soaked the cashews for an hour or longer in water first)
Optional Toppings: berries, coconut clusters, nuts or seeds
Directions:
In blender, blend all ingredients, except chia seeds, until smooth.
Sprinkle chia seeds in and mix briefly on LOW speed; just to combine.
Rest 10 minutes then blitz on low again for 2-5 seconds to evenly distribute the seeds.
Add to 1/2 cup mason jars for easy snack, dessert and breakfast options.
Chill 2-3 hours or until thickened. Next day enjoyment is best for creamier consistency.
