Greek Night

Ingredients:

Greek salad:

  • 6 tablespoons extra virgin olive oil

  • 2 tablespoons fresh lemon juice

  • 1/2 teaspoon fresh chopped garlic

  • 1 teaspoon red wine vinegar

  • 1/2 teaspoon dried oregano

  • Salt and freshly ground black pepper

  • 1 cup grape tomatoes, halved

  • 1 cup cucumber, chopped

  • 1/2 red onion, peeled, chopped

  • 1 bell pepper, seeded, coarsely chopped

  • 1/2 cup pitted black olives

  • 1/4 cup crumbled feta cheese

Stove top chicken:

  • 1/4 cup olive oil

  • 1 lemon, juiced

  • salt and pepper

  • 3 chicken breasts

Tzatziki:

  • 2 cups grated cucumber

  • 1 ½ cups plain Greek yogurt

  • 2 tablespoons extra-virgin olive oil

  • 2 tablespoons chopped fresh dill

  • 1 tablespoon lemon juice

  • 1 medium clove garlic, pressed or minced

  • ½ teaspoon fine sea salt

Directions:

  1. Salad: Combine all the dressing ingredients and mix well. Combine all the salad ingredients and lightly dress.

  2. Chicken: combine all the ingredients together to marinate and coat the chicken. Chop the chicken into cubes. Place chicken in a pan over medium heat and cooked fully. 15-20 min.

  3. Tzatziki: Combine all the ingredients in a food processor and mix well.

  4. Serve with whole wheat pita (optional) and lemon wedges.
