Ingredients

  • 1/3 cup coconut oil

  • 1/4 cup maple syrup

  • 1 banana (mashed)

  • 1 large egg (room temperature) 

  • 1/2 cup plain Greek yogurt  (room temperature) 

  • 1 ½ tsp vanilla 

  • 1 ½ flour  

  • 1 tsp baking powder

  • ½ tsp baking soda

  • ½ tsp salt

  • 1 tsp ground cinnamon

  • 1 cup shredded zucchini  

 Directions

  1. Preheat the oven to 350°F and grease a 9x5” loaf pan.

  2. Whisk wet ingredients together (oil, syrup, banana, egg, yogurt, and vanilla) together. In a separate bowl, whisk dry ingredients (flour, baking powder, baking soda, salt, and cinnamon) together.

  3. Pour the wet ingredients into the dry ingredients and then fold in zucchini.

  4. Spread batter into the prepared loaf pan. Bake for 40-50 minutes.  

  5. Remove the bread from the oven and set on a wire rack. Allow to cool completely before slicing and serving.
