Ingredients:
1 piece rye, spelt or ancient grain bread
2-3 small pieces smoked salmon or lox
2 tbsp 5% plain greek yogurt
Sliced shallots or red onion
1/2 cup portobello mushroom, chopped
1 tbsp olive oil
Salt and pepper, to taste
Cilantro or dill to garnish
Lemon wedge
Directions:
In a medium pan add olive oil and mushrooms. Sauté 5-7 min until tender.
Toast one piece of bread. Spread yogurt on the toast and add a little salt and pepper.
Layer thinly sliced onion, two or three pieces of salmon, mushrooms, sprinkle with herbs and a quick squeeze of lemon.
