Lox & Toast

Ingredients:

  • 1 piece rye, spelt or ancient grain bread

  • 2-3 small pieces smoked salmon or lox

  • 2 tbsp 5% plain greek yogurt

  • Sliced shallots or red onion

  • 1/2 cup portobello mushroom, chopped

  • 1 tbsp olive oil

  • Salt and pepper, to taste

  • Cilantro or dill to garnish

  • Lemon wedge

Directions:

  1. In a medium pan add olive oil and mushrooms. Sauté 5-7 min until tender.

  2. Toast one piece of bread. Spread yogurt on the toast and add a little salt and pepper.

  3. Layer thinly sliced onion, two or three pieces of salmon, mushrooms, sprinkle with herbs and a quick squeeze of lemon.
