Mango Black Bean Quinoa Salad
Ingredients
Lime Dressing
Juice from 3 limes
1/2 jalapeño (stemmed, seeded and chopped)
3/4 tsp cumin
1/2 salt
1/2 cup olive oil
1/3 cup fresh cilantro leaves, packed
Salad
1 cup quinoa, cooked to direction
2 cups water
1 cup red bell pepped, seeded, stemmed and diced (approximately 1 medium pepper)
1½ cup fresh mango, diced (approximately 1 mango, peeled and pitted)
1 can black beans, rinsed
3 scallions, sliced thin
1 avocado, cut into 1 inch pieces, for serving
Directions
Make the dressing: Blend lime juice, jalapeño, cumin and salt until jalapeño finely chopped. Add oil and cilantro and process until well combined, approximately 20 -30 seconds.
Make the salad: combine pepper, mango, beans and scallions to bowl with cooled quinoa.
Add ½ the dressing to start, and toss to combine.
Serve with avocado on top.
