Melon Salad

Ingredients:

  • 8 cups watermelon, cubed

  • 1 cup mini cucumbers, sliced

  • Feta cheese, crumbled to garnish

  • Zest of 1/2 lemon

  • 1/4 cup fresh mint leaves, chopped

  • Sea salt, for garnish


Directions:

  1. Chop the watermelon into cubes. Slice the cucumbers. Chop the mint. Zest the lemon.

  2. Arrange the watermelon and cucumbers on a platter. Sprinkle with feta crumbles, lemon zest, and sea salt. 

  3. Taste and adjust flavors as desired. (You can add freshly ground black pepper or a drizzle of olive oil if desired) 

  4. Serve immediately.
