Ingredients:
8 cups watermelon, cubed
1 cup mini cucumbers, sliced
Feta cheese, crumbled to garnish
Zest of 1/2 lemon
1/4 cup fresh mint leaves, chopped
Sea salt, for garnish
Directions:
Chop the watermelon into cubes. Slice the cucumbers. Chop the mint. Zest the lemon.
Arrange the watermelon and cucumbers on a platter. Sprinkle with feta crumbles, lemon zest, and sea salt.
Taste and adjust flavors as desired. (You can add freshly ground black pepper or a drizzle of olive oil if desired)
Serve immediately.
