Add chopped onions, garlic, ground turkey to a large pot with the oil. Stir occasionally on medium high heat until cooked thoroughly (10-15 min). Add the spices and mix well.
Add the crushed tomatoes, stock and salt. Increase the heat to high, bring mixture to a gentle boil, lower the heat, and cook at a gentle simmer for 15 minutes. Add in the black beans, corn and simmer for another 45 mins.
