Mexican Tortilla Soup

Ingredients (for 4-6 servings): 

  • 4 tablespoons extra virgin olive oil

  • 1 cup onion, chopped

  • 2 cloves garlic, minced

  • 6-8 cups chicken stock

  • 1 can of crushed tomatoes

  • 1 can black beans, rinsed

  • 1 cup corn, frozen

  • 1 teaspoon kosher salt 

  • 2 cups ground turkey, cooked

 Spice Mix: 

  • 1 tbsp. chili powder

  • 2 tsp. onion powder

  • 1 tsp. cumin powder

  • 1 tsp. garlic powder

  • 1 tsp. paprika

  • 1 tsp. oregano

  • 1/2 tsp. salt

Garnishes: 

  • Tortilla chips (optional)

  • Avocado, cut into cubes

  • Fresh cilantro, chopped

  • Dollop of plain Greek yogurt

  • Lime, cut into wedges

Directions:

  1. Add chopped onions, garlic, ground turkey to a large pot with the oil. Stir occasionally on medium high heat until cooked thoroughly (10-15 min). Add the spices and mix well.

  2. Add the crushed tomatoes, stock and salt. Increase the heat to high, bring mixture to a gentle boil, lower the heat, and cook at a gentle simmer for 15 minutes. Add in the black beans, corn and simmer for another 45 mins. 

  3. Garnish with desired toppings, serve and enjoy.
