Millet Scramble
Ingredients (makes 4 servings):
2 cups cooked millet (1 cup dry)
2 tbsp extra virgin olive oil
1 red pepper (seeded & diced)
1 yellow pepper (seeded & diced)
4 green onions (chopped)
2 cloves garlic (minced)
4 kale leaves (stemmed & roughly chopped)
1/3 tsp smoked paprika
pinch cayenne pepper
pinch salt & pepper
Directions:
Prepare millet according to package directions. Set aside to cool.
Heat a large non-stick skillet over medium.
Add oil and diced peppers; sauté 3-5 minutes or until lightly softened.
Add green onion, garlic and kale. Sauté 2-3 minutes longer until kale is wilted.
Stir through cooked millet and seasonings. Cook 2-3 minutes longer or until heated through.
