Millet Scramble

Ingredients (makes 4 servings):

  • 2 cups cooked millet (1 cup dry)

  • 2 tbsp extra virgin olive oil

  • 1 red pepper (seeded & diced)

  • 1 yellow pepper (seeded & diced)

  • 4 green onions (chopped)

  • 2 cloves garlic (minced)

  • 4 kale leaves (stemmed & roughly chopped)

  • 1/3 tsp smoked paprika

  • pinch cayenne pepper

  • pinch salt & pepper


Directions:

  1. Prepare millet according to package directions. Set aside to cool.

  2. Heat a large non-stick skillet over medium.

  3. Add oil and diced peppers; sauté 3-5 minutes or until lightly softened.

  4. Add green onion, garlic and kale. Sauté 2-3 minutes longer until kale is wilted.

  5. Stir through cooked millet and seasonings. Cook 2-3 minutes longer or until heated through.
