One Pot Sweet & Spicy Wraps

Ingredients (for 4 servings):

  • 1 cup uncooked quinoa, rinsed and drained

  • 1 3/4 cups low-sodium vegetable broth

  • 1 can black beans, drained and rinsed

  • 1 small red bell pepper, diced 

  • 1 cup frozen pineapple chunks, chopped small

  • 3 tablespoons soy sauce

  • 2 teaspoons smoked paprika

  • 1/4 teaspoon cayenne pepper (optional)

  • 1 tablespoon fresh lime juice, plus wedges for serving

  • Fine sea salt and black pepper, to taste 

  • Lettuce or flour wraps

Option Toppings:

  • Fresh chopped cilantro

  • Plain Greek yogurt

  • Chopped avocado

  • Fresh Salsa

  • Sliced pickled jalapeños

  • Chopped green onion

Directions:

  1. Add the quinoa and broth to a large pot. Set the heat to medium and bring to a simmer while you add the rest of the ingredients: drained black beans, red pepper, pineapple, soy sauce, paprika, cayenne, lime juice, salt and pepper. Stir to combine. 

  2. Bring to a low boil over medium-high heat. Reduce heat to medium, cover, and cook for 20 minutes, reducing heat if necessary, until the quinoa is fluffy and the water is mostly absorbed. 

  3. Top each lettuce wrap (or flour wrap, if using) with a spoonful of hot quinoa. Add your desired toppings and a lime wedge on the side.
