Peach Cobbler Oatmeal

Ingredients (for 3-4 servings): 

  • 1 cup almond milk

  • 1 cup water

  • 1.5 cups large flake oats 

  • 2 tablespoons maple syrup

  • 1 tablespoon coconut palm sugar

  • 2 tablespoons flax seed meal

  • 2 fresh peaches, chopped

  • Optional Toppings: Dollop of Greek yogurt, flax seeds and ripe peaches

     

Directions:

  1. In a medium sized pot, bring almond milk and water to rapid boil.

  2. Add oats and maple syrup. Bring back to a gentle simmer for 10 minutes or until oatmeal is fully cooked.

  3. Serve with optional toppings in the morning.
