Protein Power Cookies

Ingredients:

  • 3 ripe bananas

  • 3/4 cup egg whites

  • 1/4 cup tahini

  • 1 big scoop vegan vanilla protein powder

  • 1 1/2 cup quick oats

  • 1 tsp. cinnamon

  • 1/2 cup raisins

  • 1/2 cup ground flax seed

Directions:

  1. Preheat oven to 350 and line baking sheet with parchment paper.

  2. Mash the bananas in the bottom of a mixing bowl. Add egg whites, tahini and mix well.

  3. Add remaining ingredients and mix well again.

  4. Scoop batter onto baking sheet to form cookies. Flatten using the bottom of a measuring cup.

  5. Bake the cookies in the oven for 18-22 minutes.
