Roasted Veggie & Quinoa Salad

Ingredients:

  • 2 cups of cooked quinoa

  • 1 cup Spinach

  • 4 cups of chopped up root veggies

  • 1/3 cup of Olive Oil

  • 1 lemon

  • 1 Clove of grated garlic

  • Salt and Pepper to Taste

Directions:

  • Combine chopped up veggies with olive oil and salt & pepper- roast for 25 mins at 400

  • Cook up a batch of quinoa in a large pot

  • Once quinoa is cooked, put in a few handfuls of spinach and cover with the lid to steam for 5 minutes

  • Whisk together juice of 1 lemon with one clove of grated garlic, salt & pepper to taste and 1/3 cup of olive oil.

  • Pour over quinoa and toss with roasted root vegetables
