Roasted Veggie & Quinoa Salad
Ingredients:
2 cups of cooked quinoa
1 cup Spinach
4 cups of chopped up root veggies
1/3 cup of Olive Oil
1 lemon
1 Clove of grated garlic
Salt and Pepper to Taste
Directions:
Combine chopped up veggies with olive oil and salt & pepper- roast for 25 mins at 400
Cook up a batch of quinoa in a large pot
Once quinoa is cooked, put in a few handfuls of spinach and cover with the lid to steam for 5 minutes
Whisk together juice of 1 lemon with one clove of grated garlic, salt & pepper to taste and 1/3 cup of olive oil.
Pour over quinoa and toss with roasted root vegetables
