Sheet Pan Salmon

Ingredients:

  • 2 lbs Organic Salmon

  • 1 bunch Asparagus (ends off)

  • 1 bunch Leeks (slice leeks into rings)

  • Salt & Pepper

  • Lemon and Dill for garnish


Ingredients (herb oil drizzle):

  • 
1/2 cup olive oil


  • 2 cloves grated garlic

  • 
Zest of 1 lemon


  • Juice of 1/2 lemon


  • 2 Tbs minced dill


  • 1 tsp kosher salt


  • Black pepper


  • Whisk all ingredients together until salt has dissolved

Directions:

  1. Preheat oven to 375

  2. Toss Salmon & Veggies on a tray and drizzle salmon and veggies with the herb oil

  3. Add a little more pepper and salt

  4. Bake for 20-25 minutes

  5. Garnish with lemon and dill in a large skillet, heat sesame oil and toss in all of the ingredients (minus the spinach) until cooked to your liking  (5-7 mins on medium heat) In the last two minutes add the spinach
