Steamed Fish and Veggies

Ingredients:

For the vegetables:

  • 1 cup broccoli, cut into florets

  • 1 cup carrot, chopped

  • 1 cup celery, chopped

  • 1 cup white onion, chopped

  • kosher salt and black pepper

  • 2 teaspoons extra-virgin olive oil

  • Salt & pepper

  • 1/2 lemon, juice and zest

For the Cajun fish:

  • 4 x 8-ounce skinless halibut fillets (about 1 inch thick)

  • 2 tablespoons paprika

  • 1 tablespoon dried oregano

  • 1 tablespoon dried thyme

  • 1 tablespoon cayenne pepper

  • 1 teaspoon black pepper

  • 1 teaspoon garlic powder

  • 1 teaspoon sea salt

Directions:

  1. Place a steamer in a large saucepan. Add enough water to reach just below it. Bring to a boil.

  2. Add the vegetables and steam, covered, until tender, about 7 minutes. Transfer to a bowl, lightly season with olive oil, lemon juice, zest and salt & pepper. Cover until ready to serve.

  3. Season the halibut. Place the halibut on the steamer, cover, and cook until it flakes easily and is the same color throughout, about 7 minutes.

  4. Serve with lemon halves.
