Sweet Potato & Peach Muffins
Ingredients:
3 bananas mashed
1 very large sweet potato (cooked, peeled and mashed)
2 eggs (or 1/4 cup applesauce for vegan)
1 cup almond milk
1 TBS vanilla
2 cups spelt flour
2 cups large flake oats
2 TBS baking powder
1 TBS baking soda
1 cup peach (cut into big chunks)
1/2 cup walnut pieces
Directions:
Set your oven to 350 degrees.
Grease muffin tins with coconut oil.
Mix wet ingredients together.
Mix dry ingredients together in a separate bowl.
Stir dry ingredients into wet and pour into muffin tins.
Bake for 12-15 mins and let cool.
Makes 24 small muffins. Freezes well.
