Sweet Potato & Peach Muffins

Ingredients:

  • 3 bananas mashed

  • 1 very large sweet potato (cooked, peeled and mashed)

  • 2 eggs (or 1/4 cup applesauce for vegan)

  • 1 cup almond milk

  • 1 TBS vanilla

  • 2 cups spelt flour

  • 2 cups large flake oats

  • 2 TBS baking powder

  • 1 TBS baking soda

  • 1 cup peach (cut into big chunks)

  • 1/2 cup walnut pieces

Directions:

  • Set your oven to 350 degrees.

  • Grease muffin tins with coconut oil.

  • Mix wet ingredients together.

  • Mix dry ingredients together in a separate bowl.

  • Stir dry ingredients into wet and pour into muffin tins.

  • Bake for 12-15 mins and let cool.

  • Makes 24 small muffins. Freezes well.
