INGREDIENTS
1 3/4 cup oat flour
2 tsp baking powder
1/2 tsp baking soda
2 tbsp maple syrup
1 tsp kosher salt
1 tsp cinnamon
1/4 tsp ground nutmeg
1/4 tsp ground ginger
1 3/4 cup almond milk
2 small sweet potatoes, roasted and pureed until smooth (about ¾ cup puree)
2 large eggs
1 tsp. pure vanilla
Maple syrup, for serving
DIRECTIONS
In a large bowl, whisk together flour, baking powder, baking soda, maple syrup, salt, cinnamon, nutmeg, and ginger.
In a separate bowl, whisk together almond milk and sweet potato puree, then add eggs and vanilla.
Add wet ingredients to dry ingredients and stir until combined.
Cook pancakes (3 minutes per side)
