Turkey Meatballs

Ingredients:

  • 1 package of lean ground turkey

  • 1 jalapeño (optional for those who like a little kick)

  • 3 cloves garlic

  • 1/2 white or yellow onion (chopped)

  • 1/4 cup cooked quinoa 

  • 3/4 cup shredded zucchini (remove moisture with paper towel)

  • 1 egg 

  • 1 tsp cumin

  • 1 tsp oregano

  • 1 tsp dried cilantro leaves

  • salt and pepper 

  • cooking spray

Directions:

  1. Preheat oven to 400°.

  2. Place jalapeño, garlic, and onion into a food processor and pulse until finely minced.

  3. In a large bowl combine all the ingredients. Mix well with your hands and roll into balls or press into burgers.

  4. Bake meatballs at 400° for 15-17 minutes. Grill burgers on high heat until thoroughly cooked.
