Veggie Wrap

Ingredients:

  • 4-6 cups kale (washed and chopped)

  • 1 cup parsley (washed and chopped)

  • 3 green onions (chopped)

  • 1/4 cucumber (chopped)

  • 1/4 cup pumpkin seeds

  • 1/4 cup hemp hearts

  • 1 tablespoon feta cheese (crumbled)

  • 1 can of chick peas

  • 1/4 cup pickled beets (chopped)

  • 4-6 whole wheat wraps

Dressing:

  • 1/4 cup red wine vinegar

  • 2 tsp Dijon mustard

  • 1 large clove garlic, minced

  • 1/4 cup extra-virgin olive oil

  • 1/4 tsp sea salt

  • Freshly ground black pepper

  • 1 tsp pure maple syrup

  • 1 medium lemon (juice and zest)

 Directions

  1. Combine all the salad ingredients in a large bowl and set aside.

  2. Whisk together the dressing ingredients.

  3. Dress the salad lightly and save any remaining dressing for another salad.

  4. Place 2 cups of the salad mixture onto a wrap and roll tightly. Makes 4-6 wraps.
