Ingredients:
4-6 cups kale (washed and chopped)
1 cup parsley (washed and chopped)
3 green onions (chopped)
1/4 cucumber (chopped)
1/4 cup pumpkin seeds
1/4 cup hemp hearts
1 tablespoon feta cheese (crumbled)
1 can of chick peas
1/4 cup pickled beets (chopped)
4-6 whole wheat wraps
Dressing:
1/4 cup red wine vinegar
2 tsp Dijon mustard
1 large clove garlic, minced
1/4 cup extra-virgin olive oil
1/4 tsp sea salt
Freshly ground black pepper
1 tsp pure maple syrup
1 medium lemon (juice and zest)
Directions
Combine all the salad ingredients in a large bowl and set aside.
Whisk together the dressing ingredients.
Dress the salad lightly and save any remaining dressing for another salad.
Place 2 cups of the salad mixture onto a wrap and roll tightly. Makes 4-6 wraps.
