Ingredients
4 tablespoons chia seeds
2 cups filtered water
4 heaping cups seedless watermelon chopped (about 1/2 medium melon)
1/4 cup packed fresh mint leaves
1 lemon zest and juice
Directions
Mix together chia seeds and water in a large glass and allow to thicken for about 10 minutes, stirring occasionally, until a gel forms.
Add remaining ingredients to blender and blend until smooth.
Add chia gel and pulse a couple times to mix.
Serve immediately or chill in the fridge if desired.
