Winter Kale Salad

Ingredients:

  • 6 cups chopped kale

  • 1 avocado, diced

  • 1 cup cooked quinoa

  • 1 cup blueberries

  • 1/2 cup pumpkin seeds

  • 1/4 cup crumbled goat cheese

  • 1 cup chopped celery

For the vinaigrette:

  • 1/4 cup olive oil

  • 1/4 cup apple cider vinegar

  • 3 tablespoons freshly squeezed lemon juice

  • Zest of 1 lemon

  • 1 tbsp pure maple syrup

  • Salt and pepper to taste

Directions:

  1. To make the vinaigrette, whisk together olive oil, apple cider vinegar, lemon juice, lemon zest and maple syrup in a small bowl. Add salt and pepper as you desire. Set aside.

  2. To assemble the salad, place kale in a large bowl; top with avocado, quinoa, blueberries, pumpkin seeds, celery and goat cheese. Pour the dressing on top of the salad and gently toss to combine.

  3. Serve immediately.
